Here is how you make Carrot Bread:

Sift together dry ingredients. Blend well wet ingredients. Finely chop the pineapple. Combine all ingredients well. Transfer to lightly greased (or not!) muffin tins or bread pan. Bake at 325F for about 1 hour or until a knife tests clean. I call this recipe carrot bread because essentially this is a carrot cake recipe with the carrots doubled and the sugar content halved.
