1) Preheat oven to 325 degrees.2) In a large bowl, beat eggs with milk, onion, garlic and a dash of salt & pepper -- set aside.3) Take casing off sausage links and brown in a frying pan, making small crumbles as you fry.4) Cut or tear tortillas into 2" squares/pieces and add to egg mixture, making sure each piece is coated. 5) Grease a baking pan (8x8 or 9x13 works fine) and spread tortillas across the bottom. Layer on potatoes, sausage and rest of egg mixture.
