I was craving a donut this morning but am really trying hard to eat clean and make things at home to control what goes in them. So I made my own. Adapted from http://peasandthankyou.com/recipage/?recipe_id=6000739. She is strict vegan and uses all non-dairy. I only had dairy based protein powders and chocolate chips. Also, I doubled her recipe since I was using a muffin pan.If you have a donut pan, then these make donuts. I do not so I used a 12 muffin pan.

2 cups ground old fashioned oats (grind into fine flour in blender/processor)
2/3 cup of protein powder (I used MRM All Natural Whey; Mama Pea is vegan so she uses pea/rice proteins)
2 TBSP baking powder
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
Stevia to taste (I used two individual packets of Stevia in the Raw)
1 cup canned pumpkin (pumpkin only!, no sugars, no salt)
1 cup of non-dairy milk (I used almond, unsweetened)
1 tsp of vanilla xtract
2 TBsP of chocolate chips (Mama Pea is vegan so she uses non-dairy chocolate chips)

Here is how you make Mama Pea's Pumpkin Protein Donuts w/ Chocolate chips:

Preheat oven to 350 degrees.Grind oats into flour and combine in a large bowl with protein powder, baking powder, cinnamon, nutmeg, salt and stevia.In a separate bowl, combine pumpkin, milk and vanilla and stir.Add pumpkin mixture to dry ingredients and stir until just combined.Spoon or pipe batter into a donut pan that has been sprayed with cooking spray or lightly greased. (If you don?t have a donut pan and want to make muffins, you can double the recipe, and add the chocolate chips directly to the batter. It should make between 12-16 muffins, but you may need to bake them a bit longer than the donuts.)Bake for 8-10 minutes (for donut pan or 12-15 minutes if using a muffin pan), until donuts are set and starting to brown. Allow donuts to cool in the pan for approximately 5 minutes before transferring to a cooling rack.While the donuts are cooling, melt chocolate chips in a microwave or double boiler. Drizzle chocolate evenly over cooled donuts. Allow chocolate to set before eating.NOTE: I just put some chocolate chips on top of each dollop of batter before baking.
