I was craving a donut this morning but am really trying hard to eat clean and make things at home to control what goes in them. So I made my own. Adapted from http://peasandthankyou.com/recipage/?recipe_id=6000739. She is strict vegan and uses all non-dairy. I only had dairy based protein powders and chocolate chips. Also, I doubled her recipe since I was using a muffin pan.If you have a donut pan, then these make donuts. I do not so I used a 12 muffin pan. (If you don?t have a donut pan and want to make muffins, you can double the recipe, and add the chocolate chips directly to the batter. It should make between 12-16 muffins, but you may need to bake them a bit longer than the donuts.)Bake for 8-10 minutes (for donut pan or 12-15 minutes if using a muffin pan), until donuts are set and starting to brown. Allow donuts to cool in the pan for approximately 5 minutes before transferring to a cooling rack. While the donuts are cooling, melt chocolate chips in a microwave or double boiler. Drizzle chocolate evenly over cooled donuts. Allow chocolate to set before eating.NOTE: I just put some chocolate chips on top of each dollop of batter before baking.
