12 eggs
1 cup reduced fat cheddar cheese
2 TBSP Half and Half
1 tsp EVOO

Here is how you make Egg Bake, Mushrooms, Red Bell Pepper and Canadian Bacon:

Beat eggs with 2 TBSP half and half, milk or cream. Saute red pepper in 1 tsp olive oil until soft. Add mushrooms and Canadian bacon. Saute until mushrooms have finished "sweating" and juices have run dry.Pour pepper, canadian bacon and mushroom mixture into bottom of an 8X8 or oval baking dish (see photo). Sprinkle 1 cup of cheese (or less) over the top of the Pour pepper, canadian bacon and mushroom mixture.
