Here is how you make Sunshine Egg Bake:

Heat Oven to 350 degrees and lightly grease 9 x 13 pan with olive oilSaute mushrooms and zucchini with olive oil. Line greased pan with chiles that have been sliced open to lay flat. Layer chiles with mushrooms, zucchini, tomatoes, and cheese. In a separate bowl gently beat eggs with milk and season salt and then pour evenly over ingredients. Cover and bake for 20 minutes. Remove cover and top with salsa and tomato sauce, bake uncovered for 5 more minutes. Will make 8 3 inch servings.
