PLEASE READ ENTIRE RECIPE BEFORE COOKING- there are some notes and prep you need to be aware of before you start--also take note- the cinnamon and splenda are divided(My Mom for some reason always puts the entire amount of both in the topping) Toast all the bread until light golden brownPlace diced apple. diced pear, orange juice, yogurt, 2 Tbls Splenda and 1/2 Tbls cinnamon in a bowl- cover with plastic wrap and microwave in 3 minute intervals stirring between each interval until fruit is soft and the consistancy is similar to a pie filling.In the meantime in a wide shallow bowl(bowl should be large enough that one slice of bread will lay flat on the bottom) mix the egg substitute, soy milk, remaining cinnamon and remaining splenda until frothy. Use the widest non-stick pan you have - using 2 to 3 pieces of bread at a time (you may need to use some cooking spray if your non stick sticks a bit-wink!) quickly dip each slice of bread in the egg mixture- turn to coat. Place in the pan and cook. **make sure you either have a warming oven or at least run a serving platter under hot water to warm it- dry it before placing toast on it! Keep toast warm until you have cooked entire amount. If you have any remaining egg mixture recoat any pieces that look "skimpy" and cook a bit more. To serve place a quarter cup syrup in the bottom of each serving plate- place 2 pieces of the toast slightly overlapping in the center of each plate= then divide the fruit topping evenly over the 4 portions. It will WOW your guests and they will never guess that its a 200 cal breakfast. ***I also serve "Morningstar Farm" soy sausage patties on the side.
