Here is how you make Mango Scones:

Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.Using an electric mixer, cream the margarine (or butter) in a mixing bowl for 3 minutes. Slowly add the sugar and mix for 2 more minutes. Scrape down the sides and bottom of the bowl to make sure all the sugar and margarine (or butter) have mixed thoroughly. Mix in the eggs, then add the vanilla, skim milk and lemon zest.Sift together the flour, baking powder and salt. Add the dry ingredients to the wet and mix just until combined. Gently stir in the mangos. Use large spoon to scoop batter onto a baking pan while distancing the scones by about one inch.
