Heat oven to 425. Place 24 paper baking cups in mini muffin cups, or spray bottoms of muffin cups with Olive Oil Nonstick Cooking SprayStir muffin mix, water, apple sauce, and liquid egg whites in medium bowl just until blended, batter may be lumpy. Divide half of the batter among 24 mini muffin cups, about 2/3 way full. Bake 9-12 minutes or until golden brown and tops spring back when touched. Cool 5 minutes: carefully remove from pan.
