2 scoops soy (or other) no carb protein powder
1 packet (or teaspoon) splenda
1 teaspoon baking powder
2 pats butter (to grease pan, use a little at a time)


How Do I Make Lori's low carb pancakes?

Here is how you make Lori's low carb pancakes:

Heat a pan [or griddle] until hot enough for a drop of water to sizzle on it. Reserve butter for coating the pan or griddle - do not use it in your batter. Meanwhile, add dry ingredients to wet ingredients and mix by hand (gently) until smooth {do not overmix or batter will not fluff up). Coat your griddle or pan with a pat of butter and pour out batter to make four inch pancakes. I used one pat of butter for every three pancakes and they did not stick to the pan. Pancakes will puff up so remember to turn them so they cook on both sides and also in the middle (no "raw" pancakes).
