1/2 cup of shredded coconut
3 cups of water

Here is how you make Pina Colada Rice:

makes 8 2-cup servingsThe liquid to rice ratio is 3 to 1. Pour the coconut milk, rum extract and pineapple juice into a large measuring cup. Add enough water so that you end up with 6 cups of liquid total (depending on how much juice was in the pineapple it varies). Once this is measured pour it all in the pot and bring to a boil over medium-medium/high heat.When it is boiling pour your 2 cups of rice and half cup of shredded coconut into the pot. Stir it around to distribute the coconut evenly.Put the lid on the pot, drop the temp down to simmer and let it set undisturbed for 40-50 minutes. Not all of the liquid will absorb, but you want this it helps give it a "pudding" texture.
