Preheat your oven to 425F and grease a 9x13? pan.In a bowl, whisk together the flours, starch, psyllium, flax, guar, sugar, nutmeg, salt, baking powder and baking soda.In a liquid measuring cup, whisk together the half and half, mayonnaise and water.Pour over the dry ingredients and mix until well combined.Cover loosely and let rest 30 minutes.Roll out ⅓ of the dough between sheets of waxed paper to a wide rectangle and spread evenly with the date paste (leaving a 1? border on one long side). Sprinkle with cinnamon.Carefully roll the dough up, starting with the filled long side.
