Dice 4 oz chicken breast, add to the avocado mix, and combine well. Set aside.

Put 2 oz fresh baby spinach on a large plate. Add the avocado/chicken mix to the center. Lay 1cup of carrot strips around it (like a bird's nest). Cut 12 grape tomatoes in half and place around the chicken mix. Cut a large peach into equal slices and arrange these around the salad like petals on a flower. Sprinkle 1/2 oz walnut pieces over the salad.
