This is a great meal for fall or winter. It will fill you up and give you the warm feeling that mom's cooking used to. I did not find a listing for Oyster Crackers so I added in sodium free saltines. The oyster crackers are much better in the soup. You could also use a slice of bread for dipping. This will hold in the fridge for a week and is great for leftovers on the cool nights. Add 1 lb of split peas rinsed. Make sure to check for stones. Chop onion, celery and carrots and put into slow cooker or crock pot. Add Ham shank or diced ham. If your crock pot only has a high or low setting, set it to high for the first 3-4 hours stirring often. This will soften the dried peas. After this turn on low for 4 hours or untill the peas are like mush. You will be able to tell from the color and thickness of the soup. If you are using a ham hock, remove about 45 min before serving and seperate meat from bone and put meat back into soup. This is a great meal for those cool nights when you just want a hearty soup. You can add the oyster crackers, or break up the saltines into the soup or have a piece of bread on the side.
