In a bowl, mix together one large egg, half a cup of egg whites, and 2tbsp of light ricotta cheese.Coat pan with 2tsp vegetable oil. When pan is hot, add spinach (and any other veggie you choose to use). On medium-high, saut? veggies for 2 minutes, or until desired. Slowly pour egg mixture over the veggies. Lower temperature and cover pan. Let sit until the top of the omelet is relatively firm. Flip omelet and cook on the other side. Slide it onto a plate and enjoy!
