Extra Firm Tofu, 8 oz (weighed) then mash
Onions, raw, .25 cup, chopped
Green bell peppers, .25 cup, chopped
Garlic, .5 tsp (minced)
Lime Juice, 1 wedge
Olive Oil, 1 1tsp

Seasonings:
1/4 tsp. ground cumin
1/4 tsp. ground thyme
1/4 tsp. paprika
1/4 tsp. tumeric


How Do I Make Tofu Scram?

Here is how you make Tofu Scram:

Heat oil in skillet over medium-high. Saute onions & peppers 3 minutes, until softened. Add garlic, saute 2 minutes more. Add spice blend and mix it up for 15 seconds or so. Add 1/4 cup water and deglaze the pan, scraping the bottom to get all the garlic and spices. Add in the tofu and let cook for about 15 minutes, stirring occasionally and adding splashes of water if necesary to keep it from sticking too much. Lower the heat a bit if you find that it is sticking. Add lime juice. (Tip: I mix it in with 1/2 cup of corn grits and make a Tofu Scram bowl To kick it up a notch, you can add some soy bacon bits (health food store) and even some soy cheese.
