1/2 cup cooked brown rice
2 T mango-peach Salsa (or any salsa)
1/4 cup shredded low-fat cheddar cheese
1 teaspoon butter (optional)
1 Tablespoon olive oil


How Do I Make Tarragon Thyme Tofu Pita?

Here is how you make Tarragon Thyme Tofu Pita:

Slice tofu and wrap in several layers of paper towels to squeeze out some of the water. Cut into 1/2 to 1 inch pieces. In a small frying pan melt butter over medium heat (or spray pan with Pam), just enough to coat bottom of pan. Add tofu and drizzle 1 Tablespoon of olive oil on top. Sprinkle mixture with 2 teaspoons of dried tarragon and 1teaspoon of dried thyme. Add ground pepper to taste. Carefully stir to mix, then spread tofu out to single layer. When brown on one side, about 1 - 2 minutes depending on heat of pan, turn tofu over with spatula to brown the other side. Stir in brown rice (cooked) and fold until rice is heated through. Place pita on a plate and top with the tofu and rice mixture. Sprinkle on shredded cheddar, and top with mango salsa.
