Take four large russet potatoes and wash and peel them then place them into a pot of boiling water and boil until tender, about 20-30 minutes. It depends on if you cut the potatoes into fours or chunks before boiling. Leave some pieces bigger so when done and mashed there will be chunkier pieces of potato along with the mashed.When done boiling, drain but reserve about 1/2 cup potato water if you need to thin out your potatoes when mashing them. Mash in a bowl with the butter but leave a few pieces bigger and chunkier than the rest which should resemble mashed potatoes.Next dice the two hard boiled eggs into chopped pieces and add to the potatoes along with the mayo and mustard and dill relish.
