Here is how you make Couscous and Basil Stuffed Tomato:

Cut off the top of the tomato and remove the inside of the tomato with a spoon.Place the 2 fresh basil leaves in the bottom of the hollowed out tomato. Set aside.In a separate bowl combine the uncooked couscous, water, and salt and pepper and stir.Place the mixture inside the tomato.Sprinkle parmesan cheese on top.Cook on the grill over high heet for 10-15 minutes until the couscous has soaked up the water. (Note: depending on the size of the tomato, you may not need to use the entire cup, as the couscous will swell.)If you are using an oven, place tomato in a baking dish in a 350 degree oven for 25-30 minutes.
