1 9-inch pie crust (go ahead and buy one. Get the refrigerated roll-out kind, not the frozen kind)
3 medium apples, peeled if you like. (I like Johnathan, Fuji or Pink Lady)
1 T sugar
1 t cinnamon
1/2 sheet of graham crackers, crumbled

Here is how you make Pint-Sized Apple Pies:

Makes 6 mini piesPreheat oven to 400 degrees Fahrenheit. Peel apples, if you want, then slice. If kids are helping, let them cut the slices into cubes using a plastic knife. Roll out pie crust, then use a 4-inch round cookie cutter (or a bowl) to cut out rounds from the pie crust. Again, let kids help with this one. (There will be leftover pie crust. Either roll it out again for additional pie crusts or discard.) Place pie crusts on a baking sheet. Let kids mix apples with cinnamon and sugar. Let kids place apples in the middle of the crusts, then top with the graham cracker crumbs. Fold edges of pie crust around apples. Bake 30 minutes, or until crust is golden.
