Slowly add in milk, a little at a time, stirring in each addition until it begins to thicken before adding more. Once all the milk is added in, cover and cook 2 minutes, stirring occasionally.Meanwhile, in a medium bowl, beat egg yolks and have them ready.Slowly pour in a few tbsps of milk mixture into beaten yolks and stir to temper them. Then add the tempered eggs into the saucepan with milk mixture and stir well to combine.Allow to cook for one minute, then remove from heat and stir in 1 tbsp. butter and the 1 1/2 tsp. vanilla extract. Preheat oven to 350 degrees.Slice bananas into pre-baked and cooled pie crust, to cover bottom of dish. Pour pudding mixture over bananas.In a medium glass bowl, using an electric mixer on HIGH, beat egg whites to firm peaks. Add in remaining 6 (Tbsps or packets) of sugar/sweetener and mix well. Spread meringue evenly over hot pudding and outward to cover edges of pie shell. (This will help meringue to form a seal over pie and cook evenly)Place in oven for 10 minutes, or until golden brown. Remove from oven and allow to cool completely @ room temp.
