2 tsp. lemon zest (I prefer to just squirt some lemon juice into the batter)
2/3 cup + 1 T. sugar
1 egg, room temperature
1 tsp. vanilla extract
1 3/4 cups flour
1/4 cup ground flax
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries (raspberries also work well)
1/2 cup buttermilk (or regular milk with 1/2 tsp lemon juice or vinegar)

Here is how you make Blueberry snack cake:

1. Preheat the oven to 350?F. 2. Cream butter with lemon juice/zest and 2/3 cup sugar until light and fluffy. (the original recipe called for 1 cup. I have cut sugar all the way back to 1/2 cup, but that was pushing it. 2/3 is a happy medium.)3. Toss the blueberries with 1/4 cup of flour and set aside.4. Add the egg and vanilla and beat until combined. 5. Whisk together the remaining flour, baking powder and salt. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. 6. Gently fold in the blueberries.7. Grease an 8 or 9-inch square baking pan with non-stick spray. Spread batter into pan. 8. Sprinkle batter with remaining tablespoon of sugar. 9. Bake for 35 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. 10. Let cool at least 10 minutes before serving.
