2lb (which is 4 packages) full fat cream cheese (I like Philadelphia), ideally softened but I always forget to do that
- 3/4 to 1 cup of any flavor DaVinci's sugar free flavoring, depending on how sweet you like it
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 3 Tbsp full fat sour cream (I like Daisy or Lilly's), or creme fraiche or I bet marscapone would work!
- 4 eggs
- 1 egg yolk

Here is how you make Cheesecake, Amanda's Low Carb:

1) Preheat to 300.2) If cream cheese is not softened, chop into chunks and mix it alone, in a stand mixer. If it's softened, or once it's partially blended, add in your sweetener, a little at a time (else you will get splashed!)3) Add vanilla, lemon juice, and sour cream.4) Mix until there are no lumps, then scrape down the sides and beat until there are no lumps again.5) Add eggs + yolk, one at a time, beating very slowly after or beating just a little after each one. You don't want to over mix from this point.5) When all eggs are incorporated, pour into a springform pan.6) If you are fancy, you can do a bain marie/waterbath cooking style, but I just put my pan on a cookie sheet and stuff it in the oven and it works out ;D7) Bake for one hour. 8) Decrease the oven to 200 and bake for one more hour.9) Turn the oven off and leave it in the oven until it's completely cool. I usually am making this at night and I just leave it in the oven until the next morning.10) Refrigerate, then enjoy. A fresh slice is pretty good, but it gets better once it gets to re-cool in the fridge first. 16 servings28 muffin sized cheesecakes Baked at 300 for 25 minutes.
