Here is how you make Mini New York-Style Cheesecakes:

1. Beat sugar and cream cheese together on high speed for five minutes. Add flour and beat for an additional three minutes. In a separate bowl combine eggs and vanilla. Add the eggs and vanilla to batter and mix on low speed until smooth. Add sour cream and stir until just combined. 2. Place Nilla wafers in a plastic bag and crush until crumbs are fine. Using a rolling pin works well. Mix crumbs with butter and spoon into lined muffin tins. Press dough into the bottom of the muffin cups. Use your fingers or the bottom of a shot glass. 3.
