Kathe's Low Carb Chocolate Bar

It is amazingly easy to make Chocolate bars if you have the right ingredients. Cacao Butter can be purchased on Amazon, and you can get bakers chocolate or unsweetened cocoa practically anywhere. If you don't want to use Erythritol, substitute the sugar replacement of your choice. I add a tiny bit of honey so my body doesn't freak out by tasting sweetness without any actual sweet calories.I also use a mold that makes a candy bar that breaks into 24 pieces, but who can eat just one piece? So I break it into 6 pieces for an under 100 calorie treat.

Put your cacao butter in a microwave save bowl. Add the cocoa/cacao powder on topThen add the sweetener, including the honey. You'll be adding the nuts and cranberries later.Put your microwave on soften/melt and if it has a chocolate setting, use that. If not, set it at 50% and check it every 2 minutes.Once the cacao butter starts to melt, start stirring every couple of minutes, until it's shiny. If your chocolate is melted, but doesn't become shiny after stirring, then add a tiny bit more cacao butter. It will melt, you won't have to microwave any more. You don't want to burn it.Add the nuts and craisins and stir. The mixture will be a little thick, not runny, because of the add ins. Scoop it into your mold. Before I got my candy mold, I used to use silicone cupcake molds. They made my candy look like peanut butter cups. :-)Put them in the refrigerator to set. Once they are set, I usually store them in the freezer. These can and WILL melt in your hands, so be careful.Serving Size:?Makes 6 pieces
