2 cups of caster sugar

100g Lindt chocolate 50% or 70% (I use Greens Mayan dark chocolate for frosting as it adds a nice orange twist)
100g butter

Here is how you make Lindt Chocolate Mud cake:

Melt butter in a pan, stir in coffee then chocolate and sugar. Do not let it boil. Once combined allow to cool slightly and transfer into your mixing bowl.Sift flour and cocoa and stir into the chocolate mixture in 3 batches. Once beaten in add eggs one at a time and then vanilla. Beat well.Pour into a greased and lined 20cm springform cake tin. Bake in a slow oven for 1 1/2 hours. Let cool.Melt icing chocolate and butter.
