Here is how you make THM Special Occasion Chocolate Cake:

To make icing: Pour the full fat coconut milk into blender. Add 2 eggs, 1 tablespoon vanilla extract, 1/2 cup unsweetened cocoa, 4 tsps, ery, Xy, and stevia sweeteners and blend well. Transfer to the refrigerator, where it will thicken and set as hard as butter. (might take a few hours. Preheat oven 350, lightly coat 9x13 glass baking pan with non-stick coconut cooking spray. Make cake. Put the1 cup coconut flour, 1/2 cup flax meal, 1/2 cup cocoa, 1/3 cup ery, 1/3 Xyand 1/3 cup stevia sweeteneners and baking powder and baking soda in med bowl. Blend 10 eggs, 1/2 cup coconut oil, can lite coconut milk and 1 tsp vanilla extract in bowl with hand mixer or in blender. Add dry mixture and blend well. Let sit 5 minutes. Pour into baking panand spread evenly. Bake 35 to 55 minutes until done. Let cool. Allow icing to soften a little to room temp so it is spreadable. Top cake. Enjoy!
