To prepare the crust, preheat the oven to 350?F. Lightly coat a 9-inch-diameter pie dish with oil. Pulse the cashews in the food processor until finely ground. Stir the ground cashews and flour in a large bowl to blend. Whisk the oil, maple syrup, vanilla, and salt in a medium bowl to blend. Stir the oil mixture into the cashew-flour mixture to blend. Press the mixture into the prepared pie dish. Bake until the crust is set and very pale golden around the edges, about 20 minutes. Cool completely.To prepare the filling, decrease the oven temperature to 325?F. Stir the chocolate chips in a medium bowl set over a saucepan of simmering water until the chocolate is melted and smooth.Puree the tofu, maple syrup, vanilla, and salt in a food processor until smooth. Blend in the melted chocolate. Scrape down the sides and bottom of the food processor bowl once or twice to make sure the mixture is well blended. Pour the chocolate mixture into the pre-baked pie crust. Bake until the edges puff slightly and look dry but the rest of the filing is still glossy and jiggles, about 45 minutes. Don?t worry that the filling is not set at this point, since it will become firm once it is cold.Refrigerate the pie until it is cold, at least 3 hours and up to 2 days.
