2 tbsp canola oil
1/3 cup brown sugar
1/4 cup unsweetened applesauce
1 egg white
1 tsp vanilla
2/3 cup whole wheat pastry flour
1/2 cup oatmeal
1/4 tsp salt
1/4 tsp ground cinnamon
1/2 cup dried cherries or cranberries or blueberries
1/4 cup lightly toasted nuts of choice
2 oz. dark chocolate in chunks or chips

Directions: 1. Preheat your oven to 375 degrees. 2. Mix together the margarine, oil and brown sugar with a stand mixer on high until fluffy (around 2 minutes). 3. Add the applesauce, vanilla and egg whites. Mix to combine. 4. Add the flour, salt, oatmeal and cinnamon. Mix to combine again. 5. Add the fruits, nuts and dark chocolate. Mix to combine yet again. 6. Spray nonstick cooking spray on your cookie sheet. 7. Drop 1 TB of cookie dough onto the cookie sheet and press down slightly to flatten them out. 8.
