I like to ground my pepitas in a coffee grinder with my spices (cinnamon & nutmeg). Add these to make a fragrant dry mix.Cream the margarine and canola oil with the sugar until just mixed. Add the egg white and whip it up (mine didn't get any more whipped, but if you can do it more power to you!) then stir in the vanilla.Gradually add the dry to the wet until incorporated, then dump the applesauce on top! This will make it readier to recieve the JUMBLE MIX! While stirring, add the raisins, nuts, shredded coconut and chocolate.These will make 1 1/2 inch cookies. They took me about 14 minutes; I rotated the racks halfway through to help them cook evenly.
