What Are The Ingredients For Ricciarelli Cookies Recipe?The ingredients for Ricciarelli Cookies are: 2 large egg whites2 1/4 cup almond flour 1 3/4 cup Powdered Sugar 1 pinch salt 1/4 tsp Baking Powder 1 tsp orange zest (about half an orange) 1 tablespoon Almond Extract (by CRANKYGIRL) 1 tsp Vanilla Extract 1/4 additional cup Powdered Sugar (for coating cookies) How Do I Make Ricciarelli Cookies?Here is how you make Ricciarelli Cookies: whip egg whites and lemon juice together for 4-5 minutes until stiff peaks form. Shift together almond flour, 1 3/4 cups powdered sugar, salt, and baking powder. Then fold gently into egg whites. Will be a sticky dough now. Add orange zest and vanilla and almond extracts. Line a baking sheet with parchment paper. Use clean hands to roll dough into 1" balls, roll in extra powdered sugar until well coated, place on baking sheet and shape into an oval. Flatten slightly. Leave at room temp for about an hour, until tops have dried. Then pre-crack the tops by squeezing slightly from opposite corners (decorative only). Preheat oven to 300 degrees F and then bake 20 minutes. The cookies might look done earlier but may not be cooked completely in the center. You may have to eat one to test it ;) Cool and store in airtight container.
