Here is how you make Big Soft Fat White Cookies:

Cream shortening and sugars together; add eggs and mix thoroughly. Dissolve baking soda in hot water and add to buttermilk -- it will foam up, so use a 2 cup measuring cup. Add dry ingredients to the 2 cups of flour and add to the creamed mixture. Add lemon extract. Add additional flour, 1 cup at a time, to make a dough that is not sticky. Cover and chill for at least 2 hours.Roll out to 1/4" thickness on well-floured board. Cut out with a biscuit cutter and place cookies on a greased cookie sheet.
