What Are The Ingredients For GF Peanut Butter Oatmeal Cookies Recipe?The ingredients for GF Peanut Butter Oatmeal Cookies are: 1 small ripe banana1 1/2 c. gluten free oats 1 c. crisp rice cereal(like Rice Krispies) 1/2 baking stevia (or other granular sweetener) 1/2 c. peanut butter 1/4 c. mini chocolate chips 1/4 c. unsweetened almond milk(or milk of choice) 2 tsp. vanilla extract 1 tsp cinnamon 1/2 tsp baking soda How Do I Make GF Peanut Butter Oatmeal Cookies?Here is how you make GF Peanut Butter Oatmeal Cookies: In a food processor, add oats and stevia. Pulse until oats are broken down a little smaller that quick oats. Pour into a small bowl, and add the cinnamon and baking soda. Stir to combine, and set aside.In a large bowl, mash the banana thoroughly. Add the peanut butter, vanilla, and almond milk. Whisk to combine. Pour oat mixture and rice krispies into the pb/banana mixture and stir till fully incorporated. Fold in the chocolate chips.On a baking sheet lined with waxed paper, scoop out dough with an ice cream scoop. Slightly flatten the cookies with the bottom of a cup or your hand, as they will not spread much in the oven. Cover with plastic wrap and refrigerate for about two hours or overnight.When ready to bake, preheat oven to 350 degrees. Bake for 17-19 minutes or until edges are set and start to slightly brown.
