Slice eggplant and lay on cutting board(s). Salt both sides and let stand for 30 mins. This softens the eggplant and will be washed off prior to cooking.In a sauce pan add EVO, onions, and garlic. When the onions are clear add your tomato sauce (diced) and herbs. Reduce.In a baking dish layer tomato sauce, eggplant, sauce, and cheese.
