1/8 tsp salt

Here is how you make Low-fat Coffee Cupcakes:

1. In a sauce pan, combine milk and coffee beans. Use any kind of milk you want - skim will give a lower-fat cupcake, but whole-milk will extract more coffee flavour. Heat milk and coffee beans on medium-low heat until milk is just about to boil. Remove from heat and let the coffee beans steep for 15 minutes, during which you can do the rest of the prep. Once milk/coffee has steeped, pour through strainer to remove coffee beans, reserving milk for recipe.2. Preheat oven to 350F. Line 12 standard size muffin tins with paper liners, or grease and flour thoroughly.3. Combine flour, sugar, cocoa, baking soda, baking powder, and salt and whisk (or sift) to remove any lumps from the cocoa.4. In a bowl, beat coffee-milk, egg whites, prunes, and vanilla until well mixed. Make sure milk is cooled enough (it should be no warmer than body temperature) or it will cook the egg whites.5. Add dry ingredients 1/3 at a time, stirring between each addition just until dry ingredients are incorporated into the wet. Batter will be runny but may require addition of 1 or 2 tbsp. extra flour.6. Fill prepared muffin cups 3/4 full. Bake in preheated oven for 25-30 minutes, tops of cupcakes should spring back when pressed slightly.
