Beat butter and sugar together 2 minutes. Add 1 egg plus 1 yolk, 3/4 teaspoon salt, 1 tsp fresh ginger (finely chopped) Add 2 tbsp chopped crystallized ginger.Use whisk to blend 2 cups + 2 tbsp flour, 1 1/2 tsp powdered ginger, 1 tsp baking powder and add to mixture.Add 1/3 cup dark molasses.Make into 2 inch rolls and roll in coarse sugar and chill a couple of hours (or freeze for a couple of days if you want).Preheat oven to 350 degrees F.
