Continue to beat the egg whites until the bottom of the bowl is cool to the touch. If you add the butter before the egg whites have fully cooled, your butter will melt. Add you butter 1/2 a stick at a time, cubed, until fully incorporated then add the next 1/2, etc. Once you've added all of your butter, make sure it's all inconcoporated. You can add other flavorings to this, other extracts, instead of the vanilla. Lemon, lime or orange zest. Just watch your carb count. I'm telling you, this is heaven on a fork. Just keep in mind that it will be buttery in flavor.
