1. Add gelatin packet to 1 C of boiling water. Whisk until dissolved. Cool in refrigerator for 20-30 minutes.2. While gelatin is cooling, crush graham crackers in a ziplock baggie until crumbs. Add Smart Balance, applesauce and 1 Tbsp Splenda. Stir together and press 3/4 of the mixture into an 8" brownie pan or round pie pan to create a crust.3. Cut Neufchatel cheese into small squares and mix with lemon gelatin. Whip until smooth. Add vanilla, tub Cool Whip, dash of salt and 1/2 C Splenda. Stir together. Whip on high speed until very smooth.4. Pour mixture over graham cracker crust. Cover and refrigerate at least 1 hour.5. Just prior to serving, sprinkle with remaining graham cracker crumbs.
