Here is how you make Deceptively Delicious Lemon Raspberry Cupcakes:

1. Preheat oven to 350F. Line a 12-cup muffin tin with paper baking cups. 2. For the filling, puree the raspberries, beet puree, sugar, and butter in a blender or food processor, set aside. 3. For the batter, beat the sugar in a large bowl with the milk, squash puree, oil, egg whites, lemon juice, and lemon extract until smooth. Add the flour, baking powder, and salt, then mix until incorporated. 4. Using about half the batter, fill each muffin cup 1/3 full. Dot each with the raspberry filling, then cover with the rest of the batter. 5. Bake until the tops of the cupcakes are lightly browned and spring back to the touch, 20-25 minutes.
