How Do I Make Gingerbread-Pear Trifle?

Here is how you make Gingerbread-Pear Trifle:

Prepare lemon curd: In a stainless steel bowl placed over a saucepan of simmering water, whisk together the eggs, sugar, and lemon juice until blended. Cook, stirring constantly (to prevent it from curdling), until the mixture becomes thick (like sour cream or a hollandaise sauce) (160 degrees F or 71 degrees C). This will take approximately 10 minutes. Remove from heat and immediately pour through a fine strainer to remove any lumps. Cut the butter into small pieces and whisk into the mixture until the butter has melted. Add the lemon zest and let cool. The lemon curd will continue to thicken as it cools. Cover immediately (so a skin doesn't form) and refrigerate for up to a week. All to cool thoroughly before assembling trifle.Prepare gingerbread:In a mixing bowl, cream shortening, brown sugar, molasses and egg; mix well. Combine flour, baking soda, cinnamon, ginger and salt; add to the molasses mixture alternately with buttermilk. Pour into a greased 9-in. round baking pan. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Cool thoroughly before making trifle.Assemble trifle:Cut gingerbread into pieces to be layered into a trifle dish. Later gingerbread, pears, lemon curd, and cool whip.Share and enjoy.Number of Servings: 6Recipe submitted by SparkPeople user RICHANEY.
