This may take an hour.Stir more fequently now until you cannot see any liquid.add oil and sugar and simmer, stirring frequently until the mixture resembles mashed potato (10 to 20 mins)Add raisins and almonds.Stir for another minute and allow to cool.SyrupAdd all ingredients into pan, and dissolve sugar.Bring to the boil, and boil rapidly for 2 minutes to thicken. Allow to cool.Baklava.Brush a dish approx 8" square with melted butter.Layer half of the filo pastry in the base of the dish, brushing each layer with melted butter before adding the next.Add a generous layer of the pumkin mix and spread across the pastry.Continue adding the rest of the pastry layers, again brushing with butter between each layer,and buttering the top.Using a sharp knife cut diagonal lines about 1" apart across the pastry in both directions to create diamond shapes.Bake in the oven at 170degC/325degF for 25 to 30 minutes.
