6oz provolone cheese, shredded (about 1 1/2 cups)
1 large egg, lightly beaten
1/2 tsp salt
1/2 tsp pepper
1/3 cup finely chopped fresh basil
16 no-boil lasagna noodles

Here is how you make Manicotti with Meat Sauce:

1. For the sauce: pulse the onion and pepperoni in a food processor until coarsely ground. Add the beef and pulse until thoroughly combined.2. Transfer the beef mixture to a large saucepan and cook over medium heat, breaking up the mixture with a wooden spoon, until no longer pink, about 5 minutes. Using a slotted spoon, transfer 1 cup of the beef mixture to a paper towel-lined plate. Add the tomato paste, garlic, and red pepper flakes to the pot with the remaining meat mixture and cook until fragrant, about 1 minute. Stir in the tomatoes and simmer until the sauce is slightly thickened, about 20 minutes. Season with salt and pepper to taste.3. For the manicotti: adjust an oven rack to the upper-middle position and heat the oven to 375 degrees. Combine the ricotta, 2 cups of the mozzarella, 1 cup of the provolone, the egg, salt, pepper, basil, and reserved meat mixture in a large bowl. Bring 2 quarts water to a boil and pour into a 13X9inch baking dish. Soak the noodles until pliable, about 5 minutes. Drain the noodles on a kitchen towel and dry the baking dish.4. Spread half of the meat sauce over the bottom of the baking dish. Spread the filling across the bottom of each lasagna noodle and roll it into a tube. Arrange the rolled manicotti, seam side down, on top of the meat sauce in the baking dish. Spread the remaining sauce over the manicotti.
