Here is how you make Mandy's Truffles:

In a stand mixer, mix the Neufchatel and Cream Cheese. Add the powdered sugar and beat until creamy. Melt the chocolate chips in a double broiler and add to the cream cheese mixture. To this base, you may add 1/4-1/2 t. of any extract, like peppermint, rum, orange, maple, etc.Refrigerate mix for an hour, then roll into 60-65 blass. You can immediately roll in crushed nuts, cocoa, powdered sugar, sprinkles, etc. Or you may melt additional chocolate(bar is best) and cover each ball.
