Push the cubed watermelon through a sieve to remove the seeds and create a watermelon puree.Place the water, sugar and lemon juice into a pan and cook over a low heat stirring gently, once the sugar crystals have disolved increase the heat and boil for two minutes.Put the sugar and lemon syrup in a bowl, add the watermelon puree, stir until fully mixed.Pour into a freezer container and freeze for two hours (fast freeze setting).To serve use a fork to scrape the granita into ice crystals and pile into eight serving bowls.
