4 stalks, large (11"-12" long) Celery, raw
1 tbsp Olive Oil
1 tsp Salt
1 tsp Pepper, black
1 tbsp Rosemary, dried

3 pork chops, trimmed of all fat and diced into very small pieces (1/4")
1 Apple, chopped in 1/4" chunks (optional)
0.5 cup Bread crumbs, plain
1/2 C. Panko (Japanese style) bread crumbs
1/2 C. Finely Shredded Italian Style cheese

Here is how you make Acorn squash with Apple and pork:

1. Using a sharp knife cut off the top and bottom of each squash to create a flat base on each side, being careful not to cut through the center cavity. Slice squash in half scrape and out the seeds to create individual bowls for the stuffing. Drizzle each squash with half olive oil and sprinkle with salt and pepper, then roast in a preheated oven at 400°F for 40 to 50 minutes, or until fork tender. 2. While squash is roasting, heat a large frying pan over medium heat, add olive oil, onion, celery, salt, pepper and rosemary. Cook until onions begin to soften then add garlic and pork until pork is cooked through. Add apple, if using, cook until slightly softened. Finally, mix in the breadcrumbs and cheese. Then remove from heat. 3. One squash has finished roasting, (you can tell when you easily poke it with a fork) remove from the oven and fill each half with prepared stuffing mixture. Return the oven for 20 minutes. When five minutes are left in cooking, add a sprinkle of cheese to the top of each squash bowl.
