Combine oil and garlic over med-high heat. Place the pork chops in the center of the skillet. Toss the apples with the vinegar and then place in the skillet between the cops and the edge of the pan. Cook for 6 minutes, turning pork once and the apples a few times. When ready to serve, top the pork chops with mustard.
