Butterfly the pork chops prior to cooking so that both sides are still connected.Pour the olive oil in a medium size pan and set for medium high heat. Lowering to medium heat sear the pork chops 7 minutes on the first side and 6 minutes on the other and set aside.In another medium sized pan, melt the butter, adding the apple pieces and brown sugar. Sautee mixture until apples are soft and then add the gorgonzola. Mix together until the gorgonzola melts.
