Heat oven to 350. Lightly coat a 8x8 square baking dish with cooking spray. Heat oil in a large skillet. Add onions and cook 2 minutes, reduce heat to medium. Add kale and broth, cover and cook until kale is tender, stirring occasionally. Add cauliflower, cover and cook until cauliflower is crisp-tender. Season with salt and pepper. Transfer to baking dish. Combine tofu, cheese, bread crumbs and garlic in a bowl. Spoon evenly over vegetables. Bake uncovered for 20 minutes or until cheese has melted.
