2 T. tomato paste
1/3 c. heavy cream
1/3 c. parmesan cheese
1 c. grated mozzarella, divided
1/2 to 1 c. grape tomatoes halved
1 large bunch fresh basil cut into ribbons
1/2 t. crushed red pepper
1/4 t. salt
1/4 t. pepper

Here is how you make Creamy Caprese Quinoa Bake:

Preheat oven to 350 degrees FHeat tomato sauce and tomato paste over low heat in large saucepan. Once warm, stir in heavy cream, parmesan, crushed red pepper, salt and pepper. Remove from heat and stir in quinoa. Fold in half the mozzarella, half the tomatoes and 6 fresh basil leaves chopped. Spray 8x8 baking dish with non-stick spray. Pour mixture in dish. Top with fresh mozzarella rounds and remaining tomatoes.Bake 10-15 minutes and turn broiler on and broil 1-2 min until cheese is golden and bubbly.Remove from ovena nd top with fresh basil ribbons.
