It can easily be made into a vegetarian dish by omitting the anchovies and substituting the mozarella for vegetarian cheese.1) Preheat the oven to gas mark 6/200degreeC/Fan 180degree C. Fry the pepper, garlic, chili and basil in the olive oil for 2 minutes. Add the chopped tomatoes, olives, capers, anchovies and tomato puree and bring to the boil. Simmer for 5 minutes.2) Stir in the gnocchi and transfer to an ovenproof dish. Top with mozarella slices and bake in the oven for 20 minutes until the cheese is golden and bubbling.
