It can easily be made into a vegetarian dish by omitting the anchovies and substituting the mozarella for vegetarian cheese.1) Preheat the oven to gas mark 6/200degreeC/Fan 180degree C. Fry the pepper, garlic, chili and basil in the olive oil for 2 minutes. Add the chopped tomatoes, olives, capers, anchovies and tomato puree and bring to the boil.
