Bring to a boil over high heat, about 8 minutes; turn off heat. Cover; let stand at room temperature for a least an hour or overnight in refrigerator. When ready to use, drain beans, discarding socking liquid, onion and bay leaves.When ready to bake, preheat oven to 300 degrees.Heat 1 tbsp of oil in an 8-quart Dutch oven over med heat until hot. Add onion; saute 5 minutes or until softened. Stir in tomato paste, molasses, mustard, paprika, maple syrup and salt until combined, If your bean pot is ceramic use a large saucepan, then transfer contents to pot for oven. Stir in 4 cups of cold water; add drained beans. Bring to a boil over high heat. Tuck in thyme springs, cover and transfer to oven. Bake 3 hours.
